
Many people think that you have to give up good food to be healthy and in shape. But guess what? Great food can also be great for you. These moist, protein packed pancakes are a staple in our household, are super quick and easy to make and are one of my daughters favorite ways to kick off our weekends. So cook up and enjoy!
Prep time: 5 minutes
Cook time: 15-20 minutes
Servings: makes 6 , 4″ pancakes, approx. 8-9G protein per pancake
Ingredients:
- 1/4 cup gluten free dry pancake mix
- 1/4 cup ground flax seeds/flax meal
- 1/2 cup cottage cheese
- 2 eggs
- 1 scoop vanilla protein powder
- 1 banana (mashed)
- 2 tbsp dark chocolate chips
- seasonings to taste: salt, cinnamon, stevia, vanilla extract
Mix all ingredients together in a bowl. Heat griddle to approx. 250F or a non-stick pan to low heat. Spoon mixture into equal portions and cook low and slow, approx. 8-10 minutes per side. Serve with sweetener of choice (although you won’t need much) and fresh slices of banana if desired. Bon Appetit!
